Galand, pillows and Banana Bread

The garland and I had a fight yesterday.  It was a pretty big one.  I almost had to just walk away, but then I realized how much I loved it and I took a deep breath and tried one more time.

It wasn't a bad day yesterday at all.  Lots of Christmas decorating and I love that but that garland did not want to go on the door.  I'd get one side hung and the middle would fall and then the middle would stay and the side would fall.  Then I got it up and plugged it in and you guessed it-lights didn't work.  So I took it down and restrung new lights and went to hang it again and the plug was on the wrong side.  That's where the deep breathing came into place.  Finally the garland was hung.


See the pillows on the bench?  I used a stencil to paint on the words, but I cut the stencil out backwards the first time.  Finally got that right and went to put the pillows in and they are just a little to big for the pillow cases.  They look ok as long as you don't pick them up!

So you can see why I was a little nervous when I started making banana bread last night.  Things weren't exactly coming off without a hitch yesterday.  But I really wanted banana bread and the bananas were ready to be used!

They were turning slightly black yesterday but I wanted them BLACK to cook with so I stuck them in the freeze.  It worked.


I let them thaw out and the smushed them up.  I actually only used the middle section out of 3 of them.  It was the least squishy.

This recipe uses Pamelas Pancake and Baking mix, NOT the flour blend.  This is more like bisquick.  It was quick and easy.

4 TBS of melted butter
2 large eggs, beaten
1/2 cup sugar or honey (I used 1/4 cup sugar and 1/4 cup honey)
1 tsp vanilla
1 cup smashed up bananas

Beat with a mixer until smooth then add

1/2 tsp salt
1 3/4 cup Pamelas panacke mix

Mix again until smooth and pour into a greased loaf pan.  The recipe says a 4x8 loaf pan.  The smallest loaf pan I had was about 10 inches long and 6 inched wide but it worked fine. And yes I measured it with a ruler.  I'm a dork!



It is a very wet batter, but I could tell from looking at it that it was promising.  Bake it at 350 for about 40 minutes and your house will smell so yummy!


I could not have been happier with how this turned out.  It rose in the middle and turned golden brown.  If you don't normally bake GF you can't appreciate the sheer joy that comes from that, but trust me I may have done a little jig right there in the kitchen.

The edges got a little too brown but it was a small price to pay.  It was soft and delicious!  I can see that with a smaller pan it would have been a "taller " slice so I may bake it in mini poaf pans next time and there will be a next time!

Calorie wise I really think its not too bad either.  Only 4 TBSP of butter in the whole thing and the honey helps with the sugar issue although 1/2 isn't too bad.  So enjoy!  It's makes a wonderful breakfast. Trust me!
